Ridiculously


easy, simple, and absolutely delicious.  Insalata caprese.

Freshest scratch,  top-quality ingredients are imperative.  Mozzarella di bufala.

Organic heirloom beefsteak tomatoes

and cherry tomatoes medley.

Organic basil.

Traditionally served by layering the ingredients, then dressing with high quality cold-press olive oil and a bit of salt and pepper, I like mine toss altogether.

A perfect summertime pick-me-up dish.

To send it soaring, I add some balsamic dressing, 3-4 cloves of fresh chopped garlic, splashes of olive oil and Shibui SauceModena balsamic vinegar reduction free of salt, sugar and gluten.  Mix all ingredients and let the flavors marinate together.   It tastes delicious when the balsamic vinegar and garlic flavors soak into the cheese.  Just a little Sicilian twist to the caprese salad with a special zing.

Lately, I’ve eaten quite a bit of par-baked organic Ciabatta buns in the form of fauxbux sammies and caprese sammies, complete with dice-up bell pepper and strawberries.  Perfect picnic food.  Buona cena!

A wicked-busy day and weekend here…more cleaning and clearing.    Meteor showers over next few days…I wonder where I would be able to see it here in town.

  1. Ahhh, this is one of my favorite summer salads too! My granddaughter runs around the garden plucking the cherry tomatoes off their stems and stuffing in her mouth. Thankfully she leaves the larger heirlooms for the adults to enjoy! 🙂

    • My older teen used to do that do, Karen, back when she was about 2 and I had my own English garden. She went around and picked off 30+ bushes of my precious cherry tomato varieties. Thank goodness I had plenty to go around. And great thing about that she never really discovered the sugar kind of candies.

      Love ’em beefsteak tomatoes! They started to show up at the farmers market here.

  2. Mmmmmm, Caprese salad. We did that yesterday, but combined with pasta for a lovely Caprese pasta salad. Added cannellini beans for a little more oomph. Delicious!

    • I just can’t have enough of Caprese. Days like what we have been having…it’s nice not to heat up the house with any sort of cooking over the stove or oven.
