and cherry tomatoes medley.
Traditionally served by layering the ingredients, then dressing with high quality cold-press olive oil and a bit of salt and pepper, I like mine toss altogether.
A perfect summertime pick-me-up dish.
To send it soaring, I add some balsamic dressing, 3-4 cloves of fresh chopped garlic, splashes of olive oil and Shibui Sauce—Modena balsamic vinegar reduction free of salt, sugar and gluten. Mix all ingredients and let the flavors marinate together. It tastes delicious when the balsamic vinegar and garlic flavors soak into the cheese. Just a little Sicilian twist to the caprese salad with a special zing.
Lately, I’ve eaten quite a bit of par-baked organic Ciabatta buns in the form of fauxbux sammies and caprese sammies, complete with dice-up bell pepper and strawberries. Perfect picnic food. Buona cena!
