Want to Play Iron Chef?

Anyone? This is what’s in my box and don’t know what to do with: ground beef, eggplant, limes, purple basil, okra, baby zucchini w/flowers, butternut squash, portabello Mushrooms.   Unbelievable how fast this week flew by. And first real snow!

It’s that time of year when beautiful colored leaves begin disappearing and the weather gets beyond crisp and cold.  Me, pulling out those wool sweaters and start layering.  I lament the coming of frost.  It just seems impossible that I am going to have to wait a good 7 months to have some beautiful colors outside my door again!

Older teen was dropped off at school at 7 in the morning and now in Seattle for the big weekend.

Hubby and the rest of the kids finally got on the road for the valley before 4.

Me…alone in the house?!

There are lots going on here at present…load of self-imposed deadlines…many under wraps ’til they’re fit to be seen or ’til I remember during daylight hours to take pictures.

Thanksgiving is rolling in faster than I’d like. Bet many of you feel the same way. How do you handle the stress?

Sarah — roast all those veggies with some olive oil under the broiler and then make a vegetable lasagne but add the ground beef — sort of a semi-veggie lasagne — and use spinach, fresh mozzarella and parmesan cheese, too, in between the lasagne noodles. Cheese on top so it gets all good and crispy. Rather than spend all day making homemade pasta sauce, I usually go down to my neighborhood Italian restaurant and buy a big container of their sauce. Good luck. Sounds like time for comfort food.

    • Yep, comfort food is just the ticket in this first of snow season! And thank you for the solution. Since I’m by myself, I will even share it with my neighbor who is an empty nester 😀
